Retko ko se sa osmehom seća 1993 godine. Rat, inflacija, kriminal, vratili su nas godinama unazad umesto da idemo napred! Da li zato što sam bio klinac i pomalo blentav, pa nisam shvatao ozbiljnost situacije, sećam se samo lepih događaja koji su meni bili bitni. Prve markirane patike (legendarne Puma disc), organizacija maturske večeri sa drugaricama Sanjom i Majom (kad se samo setim zelenih cipela i šarene košulje u kombinaciji sa prslukom koje sam ponosno nosio to veče😀), polaska u srednju školu… Sećam se i džakova brašna od 50kg (e to su bile zalihe😀) od kojih je majka pravila najbolju pitu savijaču! Danas moj Ognjen sa svojom generacijom slavi matursko veče! Bogu hvala, bar nema rata, ali ostalo je nažalost nekako slično sa tom ’93-om! Želim da verujem da će ova generacija, ovu večer i ovu godinu pamtiti po prvim simpatijama, po prvim poljupcima, po novim patikama, odelu, haljinama za maturu, po novim poznanstvima… A mi ćemo im pomoći u tome, bar dok još malo ne odrastu, jer ipak su i oni samo neki novi klinci, pomalo naivni i neiskusni… P. S. Ja ću se danas potsetiti te pite koju sam obožavao, ali na malo drugačiji način, jer nema šanse da je napravim tako dobro… 😀Pravićemo pitu sa tri vrste punjenja od gotovih kora. Pripremite: pakovanje od 500g tankih kora, 500g mladog luka, 200g pancete, 400g šampinjona, 200g mladog sira 200g feta sira, 2 čaše kisele pavlake (20% mm) jedno jaje i listove peršuna.
Ako sve pripremimo i iseckamo unapred, biće nam mnogo lakše. Mladi luk, pečurke i pancetu iseckajte sitno, a u jednoj posudi pomešajte mladi sir, fetu, kiselu pavlaku i jaje (ne verujem da ćete morati posoliti smesu jer je feta već dovoljno slana).
U jednu posudu (šerpa ili tiganj) stavite polovinu mladog luka na malo ulja, a u drugu pancetu. Dinstajte na laganoj vatri do 10 minuta.
U prvu posudu sa mladim lukom dodajte šampinjone, a u drugu sa pancetom ostatak mladog luka. Dinstajte još 10-ak min, posolite, ocedite od ulja i stavite sa strane. U smesu sa pancetom i mladim lukom dodajte čašu kisele pavlake.
E sada idemo na slaganje. Prvo radimo trouglove sa punjenjem od sira. Stavite jednu koru, premažite je uljem i pospite listićima peršuna.
Stavite i drugu koru preko, pa isecite na tri dela po dužini.
Na početak svake trake stavite otprilike po dve kašike smese.
Napravite trouglove kao na slici. Količina je dovoljna za 12 trouglova.
Za punjenje od pancete, stavite prvu koru, premažite je uljem, pa stavite drugu koru i rasporedite pola smese po celoj površini. Uvijte po široj strani i dobićete dve “kobasice”.
Za punjenje od pečurki stavite samo jednu koru, rasporedite smesu, takođe urolajte po široj strani, pa uvijte u oblik puža.
Premažite uljem ili umućenim jajem i pecite do pola sata na 180°C.
